I would like to build my first Sukkah this year and am aiming for a completely kosher one. Does anyone know where I can get plans and a materials list?
The easiest way is to buy one that comes with all the necessary, certified-kosher, parts. http://www.sukkahdepot.com/English/Defau
If you want to build it yourself, the basic guidelines are as follows:
A sukkah must have at least 3 solid walls that will not billow in the wind.
The roof of the sukkah must be made from something natural, like wood, and must have spaces in it to allow one to see the sky. However, the roof must provide more shade than sun.
You are not allowed to build a sukkah under a tree.
There are many other laws, some of which are quite complicated. See here for more:

Consult an Orthodox rabbi for more.
As far as I know, and how my family builds it, is that you need to be able to see the stars through the ceiling and it needs 4 sides.
